This is a muffin recipe modified from an apple tea cake recipe in the Bundaberg CWA Cook Book first published in 1958.

Ingredients

1.5 cup Wholemeal Flour

4 g Bi Carb Soda

0.33 cup Sugar

0.5 tsp Salt

0.5 tsp Ground Cinnamon

2 tbsp Margarine

2 each Granny Smith Apple

.75 cup Skim MIlk

Recipe

  1. Preheat oven to 180 degrees C. Mix all dry ingredients in a bowl.
  2. Chop up Apple finely leave the skin on or blitz in a food processor.
  3. Add the apple margarin and skim milk to the bowl and mix through don\'t over beat.
  4. Pour the mix into muffin pans and place in the oven for between 12 to 15 minutes. Check they are cooked and then remove and cool on a tray.

Variations

Any fruit would be acceptable for this recipes such as berries, pear, stone fruits etc.
