Apple Tea Cake Muffin
This is a muffin recipe modified from an apple tea cake recipe in the Bundaberg CWA Cook Book first published in 1958.

1.5 cup Wholemeal Flour
4 g Bi Carb Soda
0.33 cup Sugar
0.5 tsp Salt
0.5 tsp Ground Cinnamon
2 tbsp Margarine
2 each Granny Smith Apple
.75 cup Skim MIlk
- Preheat oven to 180 degrees C. Mix all dry ingredients in a bowl.
- Chop up Apple finely leave the skin on or blitz in a food processor.
- Add the apple margarin and skim milk to the bowl and mix through don\'t over beat.
- Pour the mix into muffin pans and place in the oven for between 12 to 15 minutes. Check they are cooked and then remove and cool on a tray.
This is a tasty treat brings back memories of the once popular Apple Tea Cake.
Any fruit would be acceptable for this recipes such as berries, pear, stone fruits etc.
